Dr. Agatston is a cardiac surgeon 1st and dietician specialist 2nd. His simple chemistry lessons help the reader understand the physiological responses to proteins, good/bad carbs, fats and liquids. Based in medical research and aimed at targeting improved heart health, this book is worth reading. As God’s people, who are responsible and privileged to be living epistles for Him, The South Beach Diet plan and book is a wise library addition.
